  • 1 large Eggplant Sliced
  • 2 medium Green Peppers Chopped
  • 2 medium Tomatoes Chopped
  • 2 tablespoons Olive Oil For frying
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Cooking Steps

  • Slice the eggplant and sprinkle salt to draw out moisture. Let it sit for 30 minutes.
  • Rinse the eggplant slices and pat dry with a paper towel.
  • Heat olive oil in a fry pan over medium heat.
  • Add the eggplant slices and fry until golden brown, about 5-6 minutes on each side.
  • Once cooked, remove from the pan and set aside.
  • In the same pan, add the green peppers and tomatoes, cooking until softened.
  • Combine eggplant with the vegetables, season with black pepper, and serve.
