  • 1 lb raw shrimp (large, peeled, and deveined) about 16 or 20 count per 1 pound
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon Italian seasoning thyme, basil, oregano, rosemary
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper coarse
  • 5 cloves garlic minced
  • 2 tablespoons olive oil

Creamy Tuscan sauce

  • 4 oz sun-dried tomatoes chopped
  • 14 oz artichoke hearts drained and chopped
  • 4 oz fresh spinach
  • 1 cup heavy cream
  • 0.25 teaspoon smoked paprika
  • salt to taste

How to sear the shrimp

  • Season the shrimp with smoked paprika, Italian seasoning, salt, and pepper.
  • Heat olive oil in a large skillet on medium-high heat until hot. Add shrimp and garlic; cook for about 2 minutes per side.
  • Ensure shrimp are not overcrowded. Remove from heat and keep shrimp on a plate.

How to make Tuscan sauce

  • Add sun-dried tomatoes and artichokes to the same skillet, cooking for 1 minute on medium heat.
  • Add fresh spinach and cook until wilted, about 2 minutes.
  • Pour in heavy cream and smoked paprika; bring to a simmer and stir for about 1 minute. Season with salt as needed.

Assembly

  • Add seared shrimp back to the skillet with the cream sauce. Spoon sauce over shrimp and simmer until heated through, about 2 minutes.
  • Season with salt if needed.

Notes

Creamy Tuscan shrimp is best served immediately. Can be easily adjusted to be dairy-free by using alternatives like coconut milk.
