Ingredients
  

Tortellini

  • 1 pound cheese tortellini fresh or thawed from frozen
  • 1 unit egg
  • 2 tablespoons whole milk
  • 1 cup Italian seasoned panko or breadcrumbs
  • extra virgin olive oil spray

Sauce

  • marinara or pizza sauce for serving

Instructions
 

Preparation

  • Preheat oven to 400F. Line a baking sheet with nonstick foil or a silpat.
  • Place the bread crumbs in a gallon-sized zipper-top bag. Gently crush the bread crumbs.
  • Whisk together the egg and milk in a mixing bowl. Add in the tortellini and toss to coat evenly.
  • Drain the tortellini in a colander, then transfer to the bag of bread crumbs. Seal the bag, removing as much air as possible.
  • Shake the bag to distribute the bread crumbs evenly, then pour the coated tortellini onto the prepared baking sheet, and spritz with olive oil.
  • Bake for up to 20 minutes, or until crisp and puffed. Optionally, broil briefly for darker crumbs.
  • Let cool for 1 minute before transferring to a serving tray. Serve with marinara or pizza sauce.

Notes

For extra crunch, avoid putting silpat under the broiler as it can catch fire.
