Ingredients
  

Chicken and Sauce

  • 3 tablespoon extra-virgin olive oil divided
  • 4 pieces boneless, skinless chicken breasts
  • Kosher salt to taste
  • Freshly ground black pepper to taste
  • 2 cloves garlic finely chopped
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon crushed red pepper flakes
  • ¾ cup low-sodium chicken broth
  • ½ cup finely chopped sun-dried tomatoes
  • ½ cup heavy cream
  • ¼ cup finely grated Parmesan
  • Torn fresh basil for serving

Cooking Steps

  • Preheat the oven to 375°F (190°C) and arrange a rack in the center.
  • In a large ovenproof skillet over medium-high heat, heat 1 Tbsp. of oil. Season the chicken with salt and black pepper, and cook until golden brown, about 5 minutes per side. Transfer chicken to a plate.
  • In the same skillet over medium heat, heat the remaining 2 Tbsp. of oil. Stir in the garlic, thyme, and red pepper flakes, cooking until fragrant, about 1 minute. Stir in the broth, tomatoes, cream, and Parmesan; season with salt. Bring to a simmer, then return the chicken and any accumulated juices to the skillet.
  • Transfer the skillet to the oven and bake until the chicken is cooked through, about 10 to 12 minutes, or until an instant-read thermometer registers 165°F (74°C) in the thickest part.
  • Arrange the chicken on a platter, spoon sauce over, and top with basil.
