Equipment

  • oven
  • baking sheet
  • parchment paper

Ingredients

  • 1.5 pounds broccoli cut into medium florets
  • 3 tablespoon olive oil
  • 3 cloves garlic minced or ½ teaspoon garlic powder
  • 0.5 teaspoon fine sea salt or more to taste
  • 0.25 teaspoon pepper or to taste
  • 2 tablespoon freshly grated parmesan optional, to serve

Instructions

  • Preheat the oven to 425°F and line a baking sheet with parchment paper.
  • On the prepared baking sheet, toss the broccoli florets with the oil, garlic, salt, and pepper.
  • Spread the broccoli in a single layer and roast in the oven until the edges are golden and lightly browned and the stems are crisp-tender, about 14-18 minutes.
  • Sprinkle with freshly grated parmesan if using and serve right away.

Notes

Rinse the broccoli under cold running water then pat dry thoroughly to help it crisp up in the oven. You can roast the broccoli stem as well, just be sure to use a vegetable peeler to remove the fibrous outer layer on the stem first, or it will be too tough to chew. Chop the stem into bite-size pieces.
