Ingredients
  

Meatloaf Ingredients

  • ¾ cup Seasoned Breadcrumbs
  • 1 ½ pounds Ground Beef, lean
  • 1 onion, diced (I used a yellow onion)
  • 3 teaspoon Garlic, freshly minced
  • 1 Egg
  • ¼ cup BBQ Sauce
  • ¼ cup Tomato Sauce
  • ½ cup Peas, frozen
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • ¼ cup Parsley, chopped

Potatoes

  • 1 ½ pounds Potatoes, peeled and quartered (I used Red potatoes)
  • ¼ cup Heavy Whipping Cream
  • 4 tablespoon Butter
  • 1 cup Cheddar Cheese, shredded

Instructions
 

Meatloaf Instructions

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine the ground beef, breadcrumbs, diced onion, garlic, egg, BBQ sauce, tomato sauce, peas, salt, pepper, and parsley.
  • Mix until well combined and shape into a loaf. Place in a baking dish.
  • Bake in the preheated oven for 60 minutes or until cooked through.

Mashed Potatoes Instructions

  • While the meatloaf is baking, boil the quartered potatoes in salted water until tender, about 15-20 minutes.
  • Drain the potatoes and return them to the pot.
  • Add heavy whipping cream, butter, and cheddar cheese to the potatoes. Mash until smooth and creamy.

Notes

This dish is best served warm, alongside the meatloaf for a hearty meal.
