- 2 pounds medium carrots about 8
- 3 cloves garlic
- 3 tablespoons unsalted butter
- 1.5 tablespoons honey
- 1 teaspoon kosher salt
- 0.25 teaspoon freshly ground black pepper
- ½ small lemon
- chopped fresh parsley leaves for garnish (optional)
Preparation
Arrange a rack in the middle of the oven and heat the oven to 425°F.
Peel and trim the carrots. Cut them into 2-inch pieces, halving or quartering if they are more than 1-inch thick. Place on a baking sheet and mince the garlic.
Melt butter in a saucepan, add minced garlic and cook until fragrant. Remove from heat and whisk in honey.
Drizzle half the honey glaze over the carrots, season with salt and pepper, toss to coat, and spread out evenly.
Roast for 15 minutes, then toss and roast for another 15 to 20 minutes until tender and browned. Drizzle remaining glaze and lemon juice over the carrots before serving. Garnish with parsley if desired.
