Main Ingredients
- 5 pieces green plantains
- 2 tablespoons lemon juice
- 1 pound pork belly
- ½ piece red onion
- 6 cloves garlic
- 2 tablespoons vegetable oil
- a pinch salt
Preparation Steps
Wash the plantains and chop each into 3-4 chunks, with the skin on.
Place in a pot, cover with water, season with salt and add lemon juice.
Cook on medium heat for about 15-25 minutes until tender.
Prepare the pork belly by cutting into cubes, seasoning with salt, and frying until crispy.
Transfer pork belly to paper towels to absorb excess fat.
Keep ½ cup of fat from the pork belly pan, discard the rest, and sauté onion and garlic.
Ladle out 1 cup of plantain cooking water and drain the cooked plantains.
Peel the plantains and mash the pulp, adding reserved hot water for consistency.
Mix in fried onion, garlic, and half of the pork belly cracklings, then season and serve immediately.
Garnish with extra onion, cracklings, and chopped cilantro!
