Main Ingredients

  • 5 pieces green plantains
  • 2 tablespoons lemon juice
  • 1 pound pork belly
  • ½ piece red onion
  • 6 cloves garlic
  • 2 tablespoons vegetable oil
  • a pinch salt

Preparation Steps

  • Wash the plantains and chop each into 3-4 chunks, with the skin on.
  • Place in a pot, cover with water, season with salt and add lemon juice.
  • Cook on medium heat for about 15-25 minutes until tender.
  • Prepare the pork belly by cutting into cubes, seasoning with salt, and frying until crispy.
  • Transfer pork belly to paper towels to absorb excess fat.
  • Keep ½ cup of fat from the pork belly pan, discard the rest, and sauté onion and garlic.
  • Ladle out 1 cup of plantain cooking water and drain the cooked plantains.
  • Peel the plantains and mash the pulp, adding reserved hot water for consistency.
  • Mix in fried onion, garlic, and half of the pork belly cracklings, then season and serve immediately.
  • Garnish with extra onion, cracklings, and chopped cilantro!
