Ingredients
  

  • 3 eggs eggs
  • 2 lemons lemons
  • 8 cups chicken broth 4 cans
  • ½ cup Orzo uncooked
  • 8 oz shredded chicken
  • 4 pinches fresh spinach leaves

Instructions
 

  • Pour 4 cans of chicken broth into a large stockpot.
  • Heat the chicken broth over high heat until boiling.
  • Once broth is boiling, slowly add ½ cup of uncooked Orzo while gently stirring.
  • Let the broth/Orzo mixture cook on high heat for 4 minutes.
  • Beat 3 eggs in a medium-sized bowl.
  • Squeeze juice from 2 lemons into a measuring cup.
  • Pour the freshly squeezed lemon juice into the bowl with the eggs and whisk.
  • Ladle out about 1 cup of hot broth/Orzo soup and slowly add it to the lemon and egg mixture while whisking vigorously.
  • Add the shredded chicken pieces into the hot soup.
  • Add fresh spinach and stir until wilted.
  • Reduce heat slightly until the broth stops bubbling.
  • Stir in the lemon/egg mixture and cook over low heat until thickened.
  • Add black pepper and garnish with fresh spinach leaves.

Notes

Using a pre-cooked rotisserie chicken saves time. Adjust lemon juice quantity to preference. Remember to temper the eggs carefully.
