Ingredients
  

Chicken

  • 4 large boneless skinless chicken breasts

Dredge Mix

  • 2 cups flour
  • 4 teaspoon salt
  • 4 teaspoon black pepper
  • 3 tablespoon ground ginger
  • 1 tablespoon freshly ground nutmeg
  • 2 teaspoon ground thyme
  • 2 teaspoon ground sage
  • 1 teaspoon cayenne pepper
  • 2 tablespoon paprika

Breading

  • 4 large eggs
  • 8 tablespoon water
  • 2 tablespoon olive oil
  • 3-4 cloves minced garlic
  • 1 cup honey
  • ¼ cup soy sauce low sodium soy sauce is best
  • 1 teaspoon ground black pepper
  • canola oil for frying

Instructions
 

Preparation

  • Place the chicken breasts between 2 sheets of plastic wrap and using a meat mallet, pound the meat to an even ½ inch thickness.
  • Sift together the flour, salt, black pepper, ground ginger, nutmeg, thyme, sage paprika and cayenne pepper. This dredge mix is sufficient for two batches.
  • Make an egg wash by whisking together the eggs and water.
  • Season the chicken breasts with salt and pepper, then dip the meat in the flour and spice mixture, followed by the egg wash, and then again in the flour.

Frying Method

  • Heat a skillet with canola oil at half an inch depth over medium heat.
  • Fry the chicken for about 4 to 5 minutes per side until golden brown.
  • Drain on a wire rack and dip in the Honey Garlic Sauce before serving.

Honey Garlic Sauce

  • In a saucepan, heat olive oil and sauté minced garlic without browning.
  • Add honey, soy sauce, and black pepper, then simmer for 5-10 minutes.

Oven Baked Version

  • Preheat a baking sheet in a 425°F oven.
  • Coat chicken pieces with the dredge mix and place them on the preheated pan.
  • Spray the tops with vegetable oil. Bake for 15 minutes, flip, and bake for another 10-15 minutes.

Notes

For a gluten-free option, substitute rice flour for white flour.
