Crispy Chicken Caesar Sandwiches are a delicious crowd-pleaser with thin, crisp chicken cutlets, caesar salad, and brioche.

Ingredients
  

crispy chicken

  • 1 pound boneless, skinless chicken breasts
  • kosher salt and pepper
  • 2 large eggs lightly beaten
  • 1.5 cups seasoned breadcrumbs
  • cup finely grated parmesan cheese
  • 5 to 6 tablespoons olive oil for cooking
  • 4 to 6 pieces brioche buns

caesar salad

  • 4 cloves garlic minced
  • 3 tablespoons greek yogurt
  • 2 tablespoons parmesan cheese
  • 1 tablespoon dijon mustard
  • 2 teaspoons red wine vinegar
  • 1 teaspoon anchovy paste
  • ½ lemon juiced
  • kosher salt and pepper
  • cup olive oil
  • 10 to 12 cups chopped romaine lettuce
  • cup finely grated parmesan cheese
  • cup shaved parmesan cheese

Instructions
 

Preparation

  • Thinly slice the chicken breasts lengthwise to make thin chicken cutlets. Season the chicken all over with salt and pepper.
  • Place the eggs in a shallow plate or bowl. Stir together the breadcrumbs and parmesan in another plate or bowl.
  • Heat 1 to 2 tablespoons of olive oil in a large skillet over medium heat. Heat the oil for a good 5 minutes before adding the chicken.
  • Dip each piece of chicken into the egg, then into the breadcrumbs, pressing gently so the crumbs adhere.
  • Add the chicken 2 to 3 pieces at a time. Cook on each side until deeply golden, about 3 to 4 minutes per side. Remove each piece of chicken and place it on the paper towel-lined sheet.
  • To make the dressing, add the garlic, yogurt, parmesan, mustard, vinegar, anchovy paste, lemon juice, salt and pepper to a food processor or blender and blend until pureed. Stream in the olive oil until a creamy dressing forms.
  • Place the romaine in a large bowl and toss with salt and pepper. Drizzle with the caesar dressing. Add in the finely grated and shaved parmesan. Toss well.
  • Assemble the sandwiches by placing a cutlet (or 2) on a bun and topping it high with caesar salad.

Notes

This dressing can be made ahead of time and stored in the fridge for about 3 to 4 days.
