Ingredients
  

Chicken and Seasoning

  • 1.5 pounds bone-in, skin on chicken thighs
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.33 cup flour

Vegetables and Sauce

  • 2 tablespoons olive oil
  • 1 whole yellow onion, diced
  • 2 whole carrots, peeled and diced
  • 2 whole celery stalks, diced
  • 0.5 teaspoon salt
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 cup dry white wine
  • 1 cup chicken broth
  • 2 sprigs fresh rosemary
  • 1 sprig fresh thyme

Instructions
 

Preparation

  • Combine ½ teaspoon each of salt and black pepper with the flour in a bowl and mix. Coat the chicken thighs in the flour mixture.
  • Set the Instant Pot to sauté on high and add the olive oil. Brown the chicken thighs for about 2 minutes per side, then remove from the pot.
  • Add the onion, celery, and carrots to the pot, season with ½ teaspoon of salt, and cook for 2-3 minutes. Add garlic and tomato paste, then turn off the sauté function.
  • Return the chicken to the pot with wine, chicken broth, rosemary, and thyme.
  • Cover the pot and pressure cook on high for 20 minutes. Quick-release the pressure and serve over your favorite side, garnished with fresh parsley.

Notes

Store leftovers in an airtight container for up to 4 days. Reheat gently, adding broth if needed.
