Ingredients
  

Butter and Sugars

  • 2 sticks unsalted butter browned
  • 0.5 cup granulated sugar
  • 1.25 cups dark brown sugar lightly packed

Dry Ingredients

  • 1.5 cups all-purpose flour
  • 1 cup bread flour
  • 1 teaspoon baking soda
  • 0.25 teaspoon baking powder
  • 1 teaspoon fine sea salt

Wet Ingredients

  • 2 large eggs plus 1 egg yolk, at room temperature
  • 2 teaspoons vanilla extract

Chocolate

  • 1.5 cups semisweet chocolate chips
  • 1 cup semisweet chocolate baking wafers from Guittard or Valrhona
  • flaky sea salt optional

Instructions
 

Cooking Steps

  • Melt the butter in a small saucepan over medium heat, swirling occasionally.
  • Continue cooking until the butter is foamy and begins to crackle, then swirl until it develops a nutty aroma and brown bits form.
  • Remove from heat once amber bits form, about 2 to 3 minutes after popping stops, and pour into a mixing bowl.
  • Stir in the sugars and set aside to cool completely.
  • Combine the flours, baking soda, baking powder, and salt in a separate bowl.
  • Add eggs and vanilla to the cooled butter mixture; stir until combined.
  • Gradually stir in the flour mixture and then the chocolate chips and wafers.
  • Wrap the dough in plastic wrap and refrigerate for at least 2 hours, preferably overnight.
  • Preheat oven to 350ºF and line baking sheets with parchment paper.
  • Divide the dough into 3-tablespoon sized balls and place on prepared baking sheets, spacing them 3 inches apart.
  • Bake for 11 to 13 minutes until golden brown, sprinkle with flaky sea salt if desired, and let cool before transferring to wire racks.

Notes

Consider using Guittard’s Super Cookie Chips. Adjust chocolate quantity to preference. Milk or dark chocolate can be used but will change sweetness levels.
