Ingredients
  

  • 1 cup whole oats
  • 1 cup oat flour
  • 0.5 cup brown sugar
  • 0.5 teaspoon salt
  • 0.5 teaspoon baking soda
  • 0.5 cup almond milk
  • 2 large eggs
  • 0.25 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 0.5 cup chopped walnuts
  • 0.33 cup shredded coconut Optional

Instructions
 

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch square pan.
  • Combine whole oats, oat flour, brown sugar, salt, and baking soda in a bowl. Stir in almond milk, eggs, butter, and vanilla until well combined. Fold in blueberries and walnuts. Spread mixture into the prepared pan; top with shredded coconut.
  • Bake in the preheated oven until edges are golden and coconut is browned; about 35 minutes. Cool in the pan for 10 minutes before cutting into 16 squares.

Notes

Oat flour can be made by grinding 1 cup of whole oats in a food processor. Any type of milk can be used in place of almond milk, and frozen blueberries can be substituted for fresh if desired.
